Rhubees Berry and Almond Chocolate Cake

As you know we are all about a healthier alternative and we take such pride in coming up with new,
exciting and tasty ways to enjoy everything delicious in a healthier way. Well, today we have the pleasure
of indulging in one of the MOST decadent sucrose-free chocolate cakes I have ever tasted. Rhubees Berry
and Almond Chocolate Cake. Made here at Rhubees! OMW! Pure decadence! It’s quick, it’s easy and great
for tea or any occasion really. And yes, its SUCROSE-FREE (and gluten-free)!

We would love to share it with you! We used Rhubees Raw unsweetened Cocoa Powder, our dark sugar-free
Belgian chocolate (YUM) and Rhubees Agave sugar.

What you will need for the recipe:

225g Rhubees Belgian Dark Chocolate buttons
25g Unsalted butter, cut into pieces, plus a bit extra for greasing
5 Eggs, Separated
170g Rhubees Agave Sugar
125g Ground Almonds
2 Tbsp Milk
1 Tsp Apple Cider vinegar
1 Punnet mixed berries (blueberries and raspberries)

To decorate:

Rhubees Raw Unsweetened Cocoa Powder and whipped cream (250ml will be great).


Melt your chocolate buttons in a double boiler or in a glass bowl over boiling water, making sure that
the bowl does not touch the water.
Set your oven to 180C. Grease a 25cm spring form baking tin and line the sides with baking paper.
Mix the butter into the melted chocolate.
Whisk egg whites with the Rhubees agave sugar to soft meringue consistency. Beat in the egg yolks
and then fold in the ground almonds. Fold the egg white mixture into the chocolate and butter, and
finally add the milk and vinegar.
Pour into the prepared tin and bake for 35-45 minutes.
Once cool, remove the cake from the tin and sprinkle with Rhubees raw unsweetened cocoa powder,
add a layer of whipped cream to the top and finally place your berries. It’s as easy as that.

As an alternative to the berries and whipped cream you can add pouring cream to slices of the cake
that have just been powdered with cocoa. It’s simply delicious! Enjoy.

Tip: Apple cider vinegar lessens the cracking on top of the cake but by sprinkling the cocoa powder over
the cake it hides this it. Nevertheless cracks or no cracks the cake is simply delish!
