Rhubees Honey Coconut Cake

This is an absolute MUST try!

Our Rhubee’s Honey Coconut Cake is the perfect addition to a great tea party.

We used Rhubee’s Agave sugar in this recipe.

What you will need:
2x Extra Large eggs
1 tsp Vanilla essence
1 cup Agave sugar
1 cup Self raising flour + 1 tsp baking powder
1 pinch salt

Topping:
1 cup coconut
6 tbsp butter
4 tbsp honey
3 tbs Agave sugar
2 tbsp milk (mix together until just bubbling)

Beat eggs, vanilla essence and agave sugar until creamy.
Add flour and salt and beat on low until combined.
Heat milk and butter and fold gently into mixture.
Bake at 180 degrees for +/- 1/2 hour

Topping:
Put the topping onto the hot cake then put under grill until browned, leave oven door open when doing this.
